Cloud Eggs

Ingredients 4 eggs, separated 1/4 cup shredded cheese (Swiss or Gruyere) 1/4 teaspoon garlic powder Salt and Pepper to taste 2 oz. diced Canadian Bacon Fresh chives

Directions 1. Preheat the oven to 425ׄ°F. Prepare a baking sheet with parchment paper. Spray the parchment paper with cooking spray. Trust me when I say the cooking spray is necessary. 2. With a hand mixer beat the egg whites to stiff peaks. Then fold in garlic powder, cheese, and Canadian bacon. Be careful not to knock out all of the air you just incorporated into the eggs. 3. Spoon 4 equal portions of the whipped egg whites to the prepared sheet pan. Make a little indentation (well) for the egg yolks to nestle in later. Bake the egg whites for 4 minutes. 4. Carefully add egg yolks to the well and bake for another 4-5 minutes or until egg yolks are cooked to your desired preference. 5. At 4 minutes the egg yolks will still be runny. Garnish with chopped chives, flaky sea salt, and freshly cracked black pepper. Enjoy!!! Tips

These can be enjoyed with or without your choice of meat. However, if you choose to not add meat then I would use grated Parmesan rather than Gruyere or Swiss cheeses.
